Zucchini Hummus

I love my VitaMix. But you don't need to have a vita mix to make this. You can easily use a food processor or even a hand blender. Just combine the following ingredients and voila - snack time. 


Dump or Gently Place the following ingredients into a vessel if using the hand blender or into your processor or mixer: 


2 Zucchinis Chopped

1/2 Cup EVOO (Extra Virgin Olive Oil) 

3 Cloves of Garlic (Amount may vary depending on your love for PDA or general public appearances.)

1 Can of Chick Peas (Yea, I used a can. One day I'll soak my beans. ) 

2 Heaping Tablespoons of Almond Butter. ( I am moody about Tahini. Use it if you love it. I love Almond Butter. )

Aim Salt Shaker where you want it to land and turn grinder 3 times. (That's as close as I can get to a unit of measurement here folks. )

Squeeze in the juice from half a lemon using any strategy you like to keep the seeds from entering said dip. Though I am not sure why they are so bad anyway.....

Options: Add some Spice via Hot Sauce or Cayenne, a personal favourite. Today I was not in a spicy mood and opted out. 




Warning if you are using a VitaMix, this will literally happen in the blink of an eye. You want dip not soup. I turned mine to Variable Speed 5, then on high for 3-5 seconds.  

Hand Blenders, feel it out.  

Your dip is now ready to eat. You can store this in the fridge for up to a week. To eat it any later than that is a decision you'll have to make on your own.
